Background

Dr. Adiamo is an Early Career Research Fellow and Food Chemist, whose work focuses on unlocking the nutritional potential of underutilised plant foods through advanced digestive and microbiome analysis. With expertise in in vitro gut models, Oxford Nanopore sequencing, and metabolomics, he explores how native and novel plant materials interact with the gut to influence health. His research bridges food chemistry, digestive physiology, and microbial ecology to support the development of functional foods with measurable health benefits, particularly in the areas of gut health, fermentation, and nutrient bioavailability.
