Overview
Background
Dr Maral Seididamyeh is a food scientist whose research focuses on the utilisation of natural metabolites and the development of clean and residue-free approaches, including photodynamic treatment, for food preservation and shelf-life extension.
Her research interests also extend to broader food innovation including the valorisation of food by-products, fermentation-driven metabolite transformation, and design of micro/nano-delivery systems for bioactive compounds.
